Day 9: Healthy recipe – Spicy Black Bean Soup (Weight Watchers)

When the weather turns cold, I crave soup. I don’t eat soup much in the summer, but I really enjoy it in the winter. One of my favorites is Weight Watchers’ Spicy Black Bean Soup, so I thought I’d share it. It’s easy to make and I assume since it’s Weight Watchers, it’s fairly healthy (although it seems odd the recipe doesn’t include nutritional information).

Weight Watchers’ Spicy Black Bean Soup
1 spray of cooking spray
1 medium onion, finely chopped
4 medium garlic clove(s), minced    
4 5 oz canned black beans, undrained, divided (three 15 oz cans)    
1/2 tsp red pepper flakes, or to taste    
1 tsp ground cumin    
14 1/2 oz fat-free chicken broth, or vegetable broth    
10 oz canned tomatoes with green chilies, such as Rotel Tomatoes    
11 oz canned yellow corn, drained

Coat bottom of a large stockpot with cooking spray. Add onion and garlic and cook, stirring frequently, until onions are soft but not brown, about 5 minutes.

Place one can of beans in blender; add sautéed onion mixture, red pepper flakes and cumin. Cover and blend on high until smooth, about 30 seconds. Pour mixture back into stockpot.

Place second can of beans and broth in blender and puree until smooth; add to stockpot.

Stir third can of beans (do not puree first), tomatoes and green chilies, and corn into stockpot. Bring to a boil, lower heat to medium and simmer for 20 to 25 minutes. Yields about 1 1/2 cups of soup per serving.

I’m trying to motivate myself to go work out tonight, but I’m tired and I really just want to sit on my butt and do nothing. Oh yeah – today’s starting weight was up a pound from yesterday: 151. Yep. That’s got everything to do with my lack of motivation today. Oh well . . . tomorrow’s another day.

Today’s food journal:

— Yogurt and granola = 420 cal.

— Weight Watchers Spicy Black Bean Soup = 199 (this is the closest estimate I could find online)
— Diet Coke = 2

Dinner (local restaurant):
— Grilled chicken sandwich = 262 (estimate). And I ordered it with no french fries this time! And survived to tell the tale.
— Diet Coke = 2

Hopefully the scale moves in the right direction tomorrow.

You know weighing yourself more than once a week is depressing. Your weight can flucuate as much as 2 or 3 pounds on any given day. Concentrate on the trajectory. Also, you are exercising more and adding muscle which always moves the scale upwards as muscle weighs more than fat. You’ll be smaller even if the scales, temporarlily says otherwise. Keep up the good work.

Thanks Ann. I agree . . . weighing everyday is depressing. And it does fluctuate daily. I tend to rely more on the way my clothes fit than anything else. I’ll just be happy once I can button my pants without sucking in first. 🙂 Thanks for the encouragement, Ann! Hope you’re doing well.
